Recipe Preparation Details

Serves 2

    • 1 teaspoon fresh mint, finely chopped
    • 1 teaspoon fresh rosemary, finely chopped
    • 1 teaspoon garlic, minced
    • 1 teaspoon ginger, minced
    • 1 tablespoon soy sauce
    • red chili flakes to taste
    • 1 tablespoon cumin powder
    • 1 teaspoon lime juice
    • salt to taste
    • 2 tablespoon oil, divided
    • 4 lamb chops loins
    • ½ cup sparkling wine
    • 2 tomatoes, halved for garnishing(optional)

Prepare it

1In a mixing bowl add mint leaves, rosemary leaves, garlic, ginger, soya sauce, red chili flakes, cumin powder, lime juice, salt and 1 teaspoon oil. Mix everything well to create a marinade.

2 Add lamb chops to the marinade and coat well. Refrigerate it for 1 hour.

3Heat the rest of the oil in a stove top grill pan on really high heat. Put the marinated lamb chops to the sizzling hot pan. Reserve the leftover marinade for later.

4Cook the lamb chops on all four sides each, for 10 minutes each until the lamb is well done. Put a heavy weight on the the chops for better cooking and pretty grill marks. Remove the lamb chops and keep it on a serving plate.

5In the same pan add the halved tomatoes and grill them for 2 minutes on each side. Remove and put it as an accompaniment with lamb chops.

6Again in the same grill pan on medium low heat add the left over marinade and sparkling wine. Deg-laze the pan by removing any lamb and tomato bits on it.

7Reduce the liquid to half its size.

8Strain the liquid and pour it on the lamb chops or serve on the side as sauce.

You can also make this dish in the oven. After marinating in the refrigerator, put the lamb chops in a bake ware and pour all the marinade on top of it. Bake for 45 minutes covered and 10 minutes uncovered. Along with tomatoes you can also grill some par boiled small new potatoes to give a complete side dish to the lamb chops. If you want to avoid wine in the dish, just replace it with white wine vinegar. It will give enough acidity required in the sauce.
